Bacon, a breakfast favourite is usually eaten with good ol' toast and eggs. Next time, ditch the bacon sandwich and try these interesting recipes that celebrate bacon in all its glory.

Bacon Pancakes

The perfect breakfast recipe, these pancakes are the best way to start your day. Start by making the pancake batter and to make this you need to mix in flour, baking powder, salt, sugar, milk, eggs and melted butter. Mix all this well and add in fried crushed bacon. Scoop out small portions of the batter and pour on a heated pan with a little oil in it. Cook it well on both sides and serve with butter, maple syrup and a little more chopped bacon.

Bacon Jam

We have all heard of fruit jams, but ever heard about jam made out of bacon? This is the only thing you need on your toast every morning. Start by chopping and frying the bacon in a pan. Add in chopped onions, brown sugar, chicken/veg stock, chili powder and pepper. Sauté this well. Ad this mix to a blender along with a little honey or maple syrup and blend well. Yum!

Bacon Parsley Patties

A great way to step up your burger game, these bacon parsley patties are just what you need. Start by chopping bacon in a food processor. Add in parsley, pepper and chopped onions and blend again. Shape into patties and fry on a pan until cooked well on both sides. No more boring burgers.

Bacon Muffins

These are great for a Sunday brunch. Just mix together chopped bacon, melted butter, shredded cheese, an egg, baking powder, flour. Preheat the oven to 180 degree celsius. Pour into cupcake tins lined with cupcake liners and bake. Savoury muffins at their best!

Bacon Potato Salad

Who said that bacon can't be a part of salad? To make this, you need, chopped potatoes, onions, coriander, bacon, salt, pepper, crushed garlic, mayonnaise, lemon juice and chili powder. Mix all these ingredients and toss them in a bowl. Top it off with a little more coriander leaves and serve.
