As Indians, the most we have eaten of carrot is either in a salad or the popular north Indian dessert, gajar ka halwa. But, there is much more to this orange vegetable. It is a lot more versatile and can be used in many different recipes.

Here are a few ways in which you can use this humble vegetable and make some delicious dishes with it.

Carrot Fries

These make for a pretty good snack. They are healthy and very easy to make. Start by peeling and cutting the carrot into small strips. Add in oil, salt, pepper, chopped parsley, chilli powder, garlic powder and mix well. Put them on a baking tray lined with butter paper. Keep in it the oven for about 5-7 minutes or until the carrots turn crunchy. Serve with a dip.

A great way to start your day, this healthy smoothie makes for the perfect breakfast. In a blender, add in chopped carrots, orange juice, honey, Greek yoghurt and blend well. Yum!

Carrot Cake

The festive season is here and this carrot cake is quite a crowd pleaser. Start by mixing in eggs and sugar. Add in oil, flour, baking powder, baking soda, salt, cinnamon powder, grated carrots. Pour this mix into a baking dish and bake until well cooked. Enjoy with some cream cheese frosting.

With the nip in the air, this soup makes for the perfect comfort food. To make a carrot soup, you need to start by cooking together chopped carrots, onions, garlic, ginger, chillies, salt and pepper in a heated saucepan. Add this to a blender and mix well. Once pureed, transfer it to a bowl, garnish with coriander and serve hot.

The perfect Indian dessert with a slight twist, this carrot kheer will be wiped out in no time. Start by heating milk in a pan, and then add the sugar and carrot puree. Let it cook for a while. Garnish with dry fruits and saffron and serve hot.
