Chai Cookies Recipe

In today’s instalment of our #31DaysOfChai monsoon special, we’ll be taking a look at tea in a brand new avatar as Chai Cookies. Freshly ground tea leaves are mixed with sugar and infused with vanilla essence to create an aromatic dough which is then baked to give you a fresh take on tea in the form of Chai Cookies. - In a mixer jar, combine tea leaves, some flour and salt. Grind well till tea leaves are well powdered. Add rest of the flour and sieve together along with baking powder.

- Cream butter and sugar till light. Add essence and the dry ingredients and fold into the dough, using water if required. Shape into a log using parchment paper and chill dough for a minimum 1 hour.

- Preheat oven to 180 C. Cut dough into equal sized cookies and place on baking tray lined with parchment paper.

- Bake in preheated oven for 10 to 12 minutes or till they are baked. Cool on wire rack and serve.
