Sabudana Vada is an Indian snack prepared from sabudana pearls, mashed potatoes, and peanuts. This popular and yummy Maharashtrian Upvas (fast) snack recipe is also super easy to make!

INGREDIENTS

    1 cup Sabudana soaked
    2 boiled potatoes
    1 teaspoon grated ginger
    2 green chili finely chopped
    1 teaspoon jeera
    Hing
    Coriander leaves chopped
    Peanuts crushed roasted 1/2 cup
    Sugar to taste
    salt to taste
    Oil for frying

DIRECTIONS

In a mixing bowl add soaked Sabudana, boiled mashed potato, green chilies, ginger, cumin seeds, cumin powder, asafoetida, coriander leaves, sugar, peanut powder, salt and give it a good mix.
Take a small portion of the mixture and make a small ball and lightly press it
Heat oil in kadai and deep fry sabudana vada until golden brown on both sides
