A big bowl of Macaroni Pasta infused in tomato soup is the perfect way to enjoy a rainy day. It’s a no-fuss comfort food that can be ready in minutes and does not require much effort. Try this quick & easy recipe and pair it with garlic bread.

INGREDIENTS

    1 cups tomato puree
    1 ½ cup veg stock
    ½ tbsp olive oil
    ½ tbsp butter
    1 tbsp garlic minced
    1 small onion, diced
    1 tsp chilli flakes
    1 tbsp oregano dried
    ¼ cup fresh basil
    1 tomato, finely chopped
    ¾ cup macaroni dried
    pinch of sugar
    1 tsp salt
    1 tsp pepper
    Parmesan cheese
    Garlic bread

DIRECTIONS

Heat the olive oil and butter in a medium pan on low heat.
Add the onion and garlic and sauté for a few minutes.
Add the oregano, chopped tomatoes, chilli flakes.
Add crushed tomatoes and sauté.
Add the stock and then the macaroni and the basil leaves.
Let it simmer until cooked.
Add salt, pepper and sugar.
Serve with parmesan cheese and garlic bread
