Tomato Soup for the Hungry Soul: Hindi Recipe

Hot and creamy tomato soup is a classic that will never lose its appeal for soup lovers. Mop it up with crusty bread slices or enjoy as is. People usually begin their meal with soup but we think this can be a light dinner in itself. Here is Sadaf Hussain's recipe for tomato soup (with beetroot!) in Hindi.

INGREDIENTS

    4 large tomatoes
    6-8 garlic cloves
    8-10 black peppercorns
    ½ tablespoon olive oil/ butter
    1 teaspoon all-purpose flour/maida
    1 teaspoon sugar
    1 cup water/clear vegetable stock
    Salt to taste
    1 beetroot (optional)
    2 bay leaves (optional)
    For garnish:
    Fresh cream
    Chopped coriander
    Bread croutons/soup sticks

DIRECTIONS

Take chopped tomatoes, beetroot, garlic cloves, pepper, salt and sugar in a pan. Boil with water.
Add two bay leaves to the water and mix. Cook till mushy and easy to grind.
Put the mixture in a grinder and grind until smooth.
Heat butter in a pan and add maida. Roast for a little while and then add the soup from the grinder.
Stir constantly so that the soup doesn’t form lumps.
Pour the soup into a bowl and garnish with chopped coriander, fresh cream and bread croutons or soup sticks.
