How to make enchiladas at home with leftover rotis

This roti enchiladas recipe will take you back to your childhood. Most kids in Indian households were the lab rats of the experiments in the kitchen. Roti and rice were the base for most of it. When asked for an evening snack, our mothers would quickly spread jam over a roti, roll it and hand it out to us as we went to play.

We have one such quick recipe today. For our roti enchiladas, we make a desi stuffing using paneer, jalapenos, mozzarella cheese and of course, ginger-garlic paste. We roll this stuffing into the roti and place it all in a baking tray to only layer it with tomato ketchup and cheese. It all comes together as one hot and gooey dish.
