Shahi Paneer with Mini Ribeiro

Instructions

  • Heat 2 and 1/2 tbsp of ghee
  • Increase the flame
  • Add 2 tbsp of jeera (cumin seeds)
  • Add 500g of tomato puree
  • Reduce the flame and let the puree simmer for a minute or two
  • Add 2 tbsp of salt
  • Add red chilli powder
  • And stir
  • Add panner (cottage cheese)
  • TIP: Gently stir as the paneer (cottage cheese) is really soft and may break with rigorous stirring
  • Add black pepper
  • Stir well
  • Add tomato ketchup
  • Add cream
  • Leave the gravy to boil
  • Garnish with kasoori methi and butter
