From Mumbai to Alibaug, a Quiet Beginning

I left Mumbai the way good days are meant to begin, an early ferry, salt on the skin and phone on silent. Alibaug has always felt like an escape that doesn’t demand too much planning, but this time, there was a destination waiting at the end of the crossing. Soulinaire, IHCL’s signature lifestyle dining brand under the Taj umbrella, had found a permanent home here, right on the boardwalk, overlooking the Arabian Sea.

From the moment you arrive, Soulinaire feels less like a restaurant and more like a state of mind. The design mirrors Alibaug’s easy rhythm of a sun-washed, relaxed, quietly refined space. There’s polish, but no pressure. You slow down without realising it.

The Story of Soulinaire
Soulinaire’s journey to this moment has been shaped by celebration. Born as a bespoke catering brand under The Indian Hotels Company Limited (IHCL), the hospitality arm of the Tata Group, it became known for curating some of India’s most memorable events, intimate home gatherings, large-format celebrations and thoughtfully styled experiences where food was always central. Rooted in Taj’s century-old philosophy of warm, intuitive hospitality, Soulinaire carries that legacy forward here, translating it into a space meant for everyday moments by the sea.

Cocktails: Gin Punch (left); Cantaritos (right)

Cocktails That Set the Tone
I began my afternoon where Soulinaire gently insists you start — at the bar. The Cantaritos set the tone immediately. Tequila-driven and unapologetically refreshing, it layers kokum and grapefruit into a drink that’s tart, slightly bitter and deeply coastal. The kokum brings a distinctly Indian tang, grounding the citrus and making every sip feel alive. It’s a cocktail made for long afternoons that don’t follow schedules.

The Gin Punch followed, softer and more elegant. Gin meets Lillet Rosé and fresh citrus juice in a glass that’s floral, lightly sweet and dangerously easy to sip. It’s the kind of drink that slips into the background of good conversation. Perfect for golden hour when the light begins to change, and no one is in a hurry.

Comforting Food with Coastal Character
When the food arrived, it matched the mood, being comforting and unpretentious. The Tandoori Pomfret was the first to hit the table, smoky and beautifully charred, tasting as fresh as the sea stretching out in front of us. Crisp on the outside, tender within, just one bite and a moment of silence.

The Sichuan Chilli Chicken brought boldness to the spread with glossy, fiery and addictive flavours. Its heat cut through the coastal breeze, turning “just one more bite” into an inevitable decision. It was the kind of dish that keeps pulling you back, even when you say you’ll pause.

Comfort followed close behind. The Keema Matar with Pav felt instantly familiar and was perfectly spiced and grounding. The pav soaked up every bit of flavour, turning nostalgia into something tangible.

The meal found its coastal crescendo with the Smoky Coastal Chicken — layered, charred, and unmistakably tied to where you are. It tasted like Alibaug itself: relaxed, bold and rooted.

An Evening That Invites You to Stay
As the afternoon eased into evening, Soulinaire transformed without trying. The light softened, the bar glowed warmer, and the space filled with a gentle hum—couples leaning into conversations, families lingering, familiar faces from the ferry running into each other again. This is where Soulinaire’s strength truly lies. It doesn’t rush you. It invites you to stay.

A Day Well Spent by the Sea
I came to Alibaug in search of a good meal by the sea. I left with the feeling of a day well spent—unplanned, unhurried and exactly as it should be. From Mumbai to Alibaug, Soulinaire feels like the reward at the end of the journey and the reason you’ll make the trip again.

Because at Soulinaire, time isn’t measured in hours, but in moments worth staying for.
