The concept of Omny stems from Vicky’s personal food philosophy. “After spending a lot of time touring the world, I realised that every cuisine has something unique to offer; that there are overlaps in seemingly different cuisines… Now that I am back in India, it feels important to contextualise all that learning for the Indian palate,” says the chef.

Chef Vicky’s global culinary exposure—honed during his time on international cruise liners and seven circumnavigations of the world—translates into a vibrant, inclusive, and intelligent food offering.
From flame-kissed Caesar Salad on Fire to the ever-changing farm-fresh Bazaar, every dish carries an element of surprise. The grills section is a tribute to Vicky’s childhood love for charcoal cooking, offering dishes like Gambas Al Ajillo, and a smoky take on Filipino Chicken Adobo.
