What happens when some of India's biggest chefs come together under one roof? Of course, they chat about food. Our latest Google Hangout had chef Manish Mehrotra of Delhi's award-winning restaurant, Indian Accent, food stylist, photographer and chef Michael Swamy and executive chef of Taj Lands End's Anirudhya Roy talk about presenting Indian food in a fine dining space.
This time, Adda with Kalyan hosted by IFN's editor-at-large, Kalyan Karmakar focused on the challenges of serving desi food at a five-star or fine dining restaurant. While chef Anirudhya Roy believes that food is all about bringing experiences to the table, it is also something that triggers memories.
Food stylist, cookbook author and photographer, chef Michael Swamy says that Indian food can be presented in a sophisticated manner. After his stint at the Le Cordon Bleu in London, he incorporated French plating techniques to Indian cuisine.
Chef Manish Mehrotra of the prestigious Indian Accent, which has revolutionised Indian food in a big way believes that bringing the nostalgia factor back is very important. About opening Indian Accent in NYC, he says that the menu will see a heavy influence of regional Indian flavours.
