He catches up with Executive Chef Anupam Gulati of Marriott Hotels & Spa to talk about the resurgence of Goan food at restaurants.
For time immemorial, Goa has been known as a non-vegetarian's paradise, with little or no mention of its vegetarian delicacies. Chef Gulati stresses on Mugachi Gathi, a sprouted moong curry typically prepared in Goan Hindu homes apart from other delicacies.
The conversation spans lesser-known Goan dishes like choriz pao and ros omlette, which is a breakfast dish found at beach shacks. Quite a revelation we must say.
