Coconut Pie
The perfect sweet treat to fulfill those cravings, this pie is definitely one worth all the calories. Start by mixing together sugar, eggs, milk, grated coconut, flour, butter and vanilla essence in a large bowl. Pour this mix into a readymade pie shell and bake until a knife inserted comes out clean. Let it cool and serve.
Coconut Chocolate Bars
Bounty has been an all-time favourite for everyone who loves coconut and chocolate, so why not make it at home? First, melt and then pour milk or dark chocolate in a well-greased baking tin. Keep that in the fridge to set. Once that is done, add a layer of grated coconut mixed with sugar syrup. Let that set in the fridge again and once set, top it off with more melted chocolate. Let that completely set, cut into bars and indulge.
Coconut Bread
There is nothing better than a freshly-baked loaf of bread, and it’s even better when there's coconut. Make your Nutella sandwiches with this one instead. To make the loaf, mix together flour, baking powder, sugar, activated yest and salt along with an egg, vanilla extract and milk. Gently fold in the grated coconut. Put this in a well-greased loaf pan and bake until slightly golden brown on top. Let it cool, spread a generous dollop of Nutella and chomp on.

Still following your New Year diet? This smoothie might help you accomplish your fit body goals. To make it, start by adding coconut milk, shredded coconut, pitted dates and vanilla essence into a blender along with some cinnamon and ice cubes. Blend it well and serve.

Even though there is no competition for a choco chip cookie, coconut cookies are great too. To make these, combine flour, baking soda, salt and keep aside. Then in a separate bowl, cream together butter, brown sugar and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Bake this in the oven and enjoy.
