We've had it buttered, sprinkled with masala and even on the cob! But, this often underestimated vegetable can do wonders in the kitchen. From breads to ice-creams, a lot can be made with corn and it's high time we put it to good use. So, grab some corn kernels from your nearest market and get cooking.

Corn Ice-Cream

This is undoubtedly one of the most unique ways to eat corn.

In a large saucepan, add milk, cream and sugar along with some corn and let them boil. In a separate bowl, whisk egg yolks and some more sugar. Add a cup of the hot milk mix to the yolks, stirring constantly. Add the yolk mixture to the saucepan, stirring. Cook this for about minutes or until the mixture thickens. Sieve this mix and keep in the freezer until set. Scoop and serve.

Corn Fritters

The perfect party food, specially for all your friends who do not appreciate chicken.

In a large bowl, mix together flour, salt, sugar and baking powder. Add eggs, milk and butter along with corn kernels. Scoop little portions out of the mix and drop them in hot oil. Fry until golden brown and serve.

Corn Bread

Cut yourself a large slice of this delicious corn bread.

In a bowl, combine cornmeal, sugar, baking powder, flour and salt. Add the oil, melted butter, honey, eggs, and milk. Pour into a greased 8-inch square pan and bake until golden brown.

Corn Chips

These are perfect to munch on with some homemade salsa.

In a large bowl, mix in cornmeal, oil, salt and hot water. Mix well and spread evenly on a baking sheet lined with butter paper. Cut the chips into a desired shape and bake until crisp.

Corn Cups

Roast the corn along with garlic and 1 tsp of olive oil till the corn just starts getting brown in colour. Mix whole wheat and semolina flour, salt, pepper, parsley and jalapeno together. To this, add the roasted corn and garlic. Add the salsa to bind it together. In a greased muffin pan, add this mix and line the area. Bake the shell at 180C for about 15 mins till it sets.
