This distant cousin of the well-known gobhi aka cauliflower has not really been a favourite among the little ones. These fun recipes are a great way to add this green vegetable in their diet without a fuss.
Here are a few ways you can make broccoli taste great.
Broccoli Cheese Soup
Great during winter, this soup is perfect to keep yourself warm when the temperatures go down. To make this, start by chopping and then boiling the broccoli. In a pan, add in butter, vegetable stock, coconut milk, salt and pepper. Mix everything well. Add in the cheese and broccoli and let it simmer. Once cooked, garnish and serve hot.
These croquets make for great snacks or starters and are more than easy to whip up. Mix in chopped boiled broccoli, egg, flour, salt, pepper, Italian seasoning, chopped garlic and butter. Incorporate well and shape into croquets. Coat with a layer of egg and then a layer of breadcrumbs. Deep fry and serve. Yum!
This casserole makes for a great party dish. To make it, start by pre-heating your oven. Take broccoli, wash and then chop it. Mix in cream cheese and an egg together along with some pepper and mix it with the broccoli. Add this to a well-greased baking dish and top it off with grated cheese. Bake for 10-12 minutes or until well done. This dish will be the star of the party for sure.
