Risotto can be best described as a rich, hearty dish and the epitome of Italian cooking. It is a versatile dish, slow cooked to perfection with the best quality wine and cheese.
What makes a risotto enticing is the silky texture, and to achieve that can be a task. But, chef Francesco Francavilla has taken upon himself to serve Mumbaikars an eclectic selection of classic risottos from across Italy at Vetro – The Oberoi, Mumbai .
Born and raised in Rome, chef Francavilla has curated eight risottos from eight regions of his home country for Mumbai diners. The risotto specials coincide with Giro d’Italia, a popular bicyle race in Italy, which travels from one region to another. Florence, Rome, Naples, Milan, Bologna, Perugia, Cagliari and Sicily are the places that have inspired the menu.
Also enjoy some fine wine with your risotto, especially curated by a visiting sommelier. Book a table soon?
