Method
- Mix besan with vegetables and spices and make a thick batter with a little water
- The consistency should be of a very soft dough
- Keep aside for a few minutes
- Heat oil in a kadai
- Take one tbsp of hot oil and add to the batter and mix well
- Now take 1 tbsp of batter at a time and put into the kadai
- Put 5 to 6 tbsp at a time
- Fry on a high flame turning the pakoras with a sieve till they are lighly brown
- Remove after draining oil completely
- Allow it to cool a bit
- Now break each pakora into two and put them back into the hot oil for a second round of frying
- Turn around the pakora till they are a uniform rich, golden brown
- Remove from oil and place on a tissue once again
- Serve hot with chutney/ ketchup
