Method:

1. Blanche 2 cups of spinach in boiling water for 2-3 mins

2. Transfer to a bowl with ice-cold water

3. Cool and make a paste in a mixer adding the garlic cloves

4. In a saucepan, heat butter and add the maida

5. Add milk till the soup thickens

6. Add the spinach puree and mix well (add more milk if required)

7. Add salt and pepper

8. Garnish with cream.
