A sweet cucumber cake prepared during special occasions and in mainly Konkani homes.
1. Roast the semolina in ghee.
2. Mix the cucumber, jaggery, nuts and cardamon powder. Let it rest for 45 minutes.
3. Pre-heat oven at 200 degree celsius. Add baking powder to the mixture.
4. Grease the baking dish and arrange the turmeric leaves.
5. Pour the mixture into the pan and cover with turmeric leaves.
6. Bake for 45 minutes. Cut into pieces when cool.
