Heat the oil with mustard seeds.
Once they start popping, add the hing, bay leaf, red chilli flakes, cinnamon stick and stir.
Then add the turmeric, sugar and apples. Stir until coated with masala.
Add the apple cider vinegar and stir a few times and let cook for at least 15 minutes, until softened and resembles a chutney.
Usage: sandwich, chutney for tikkas, salads, dosa, dip.
