– Place the blanched almonds in a food processor and pulse until they turn to fine crumbs.
– Add in the Oats, Almond extract and Apricots and pulse again until the mixture becomes sticky and starts to clump together.
– Place the shredded coconut on a plate. Scoop out a heaped teaspoon of the apricot mixture and roll a ball into your hands.
– Roll it in the shredded coconut and place on a plate or tray.
– Ready to serve.
