Potato Curry

- Heat 2 tbsp oil
- Once the oil is hot, add 1/4 tsp asafoetida
- Add 1/4 tsp turmeric powder
- Add 1/2 tsp rai (mustard seeds)
- Add 1 tsp half crushed garlic-ginger-green chilli paste
- Add 1 tsp mix masala
- Add 2-3 finely chopped onions
- Mix well
- Add salt according to taste
- TIP: You can add chopped coriander while making this seasoning or as garnish in the end
- TIP: As a variation, put only crushed garlic to this gravy
- TIP: Ensure that the onions do not get overcooked, they should be seen in the gravy
- Now add the chopped potatoes
- Add 1 cup water
- Boil the potatoes till they are cooked
- Cover with a lid for the potatoes to cook under the steam
- TIP: Use a spoon to break the potato into half. If they break, they are cooked
- Ready to serve
