Gram flour, as an ingredient, has a universal reach. In Italy, it is used to make Farinata. French use it to make Socca and in India, the same ingredient is used across a variety of recipes.
2 cups of gram flour
½ cup of wheat flour
1 tsp of ajwain seeds (carom seeds)
1 tsp of amchur powder (dry mango powder)
1 tsp of anardana (dry pomegranate seeds)
2 green chillies, chopped
1 onions, chopped
Salt as per taste
2 tbsp of oil
To make the dough take bowl full of Besan.
Then fill in the wheat flour along with chopped onions, green chillies, dry pomegranate seeds, dry mango powder, ajwain (carom seeds), salt and 2 tbsp of Oil and mix it up well.
Add Water to assemble everything in the dough and knead the dough.
To make the dough smooth use oil or wheat flour.
Roll out the dough in form of rotis or thick parathas.
Add a spoon of ghee and dust some flour over the rotis.
Fold the dough from all sides into a square shape and dust it in flour again.
Then roll it again.
Cook it in a pan and tilt it after some time.
Apply ghee or butter on the sides of the roti. Prick it from the sides and tilt it.
