– In a mixer jar, combine tea leaves, some flour and salt. Grind well till tea leaves are well powdered. Add rest of the flour and sieve together along with baking powder.
– Cream butter and sugar till light. Add essence and the dry ingredients and fold into the dough, using water if required. Shape into a log using parchment paper and chill dough for a minimum 1 hour.
– Preheat oven to 180 C. Cut dough into equal sized cookies and place on baking tray lined with parchment paper.
– Bake in preheated oven for 10 to 12 minutes or till they are baked. Cool on wire rack and serve.
