Chicken Ghee Roast

A delicious Mangalorean recipe, Chicken Ghee Roast is an ideal main course recipe for buffets and dinners. It goes well with all types of bread and rice, especially with ghee rice.

For marination: -

To the chicken, bowl add yogurt, ginger garlic paste, black pepper powder, turmeric powder, red chili powder, coriander powder, lemon juice and mix them all together and let it rest for 1 hour.

For masala: - In a pan add ghee, fennel seeds, coriander seeds, cumin seeds, fenugreek seeds, cinnamon stick, whole cloves, peppercorns, garlic, dry red chili, ginger, tamarind pulp, water and mix them all together.

Grind the masala

In a pan add ghee, curry leaves, marinated chicken and mix them together

Cook it for 4-5 minutes

Add the masala paste to the cooked chicken, add salt and jaggery and mix it again

Chicken ghee roast is ready to serve.
