Coconut Rice is an easy-to-make dish that you can prepare in lunch or dinner for your family. This South Indian recipe is cooked using rice, grated coconut, lentils and spices. Try this quick Thengai Sadham recipe by Geetha in Tamil and let us know in the comments below.

INGREDIENTS

    ½ cup of grated coconut
    1 cup cooked rice
    1 teaspoon mustard seeds
    1 teaspoon urad (black gram split) dal
    1 teaspoon of chana (bengal gram split) dal
    Finely chopped green chillies
    Ginger finely chopped
    Curry leaves
    2- 3 teaspoons asafoetida
    Coriander leaves
    Salt to taste
    1 ½ tablespoons of cooking oil
    cashew nuts

DIRECTIONS

In a pan add oil, mustard seeds, urad dal, channa dal, chopped chilli, ginger, cashew nuts, curry leaves, asafoetida, grated coconut and cook until it turns golden brown.
Add in the cokked rice, salt and corriander leaves and mix it all together.
Coconut rice is ready to serve.
