- Heat oil in a pan
- Add the onions, carrots and ginger
- saute for a while
- Add the green chilli
- Allow the ingredients to sweat and soften
- TIP: You can add a little water to speed up the process
- Add the beetroot cubes
- Stir a bit
- Once the vegetables are cooked, puree them
- Add the cooked vegetables in a blender an blend them well
- Transfer the blended vegetables back into the saucepan
- TIP: Add a little seasoning and the puree works as a great dip by itself
- Put the flame on
- Add some coconut milk
- Stir well
- TIP: Ideally the soup should be on the thinner side
- Add the vegetable stock powder
- Add some salt
- Add some pepper
- Let the soup come to a light boil and then cool it
- Ready to serve
