Appetizing, cooling-this healthy beetroot soup recipe is also easy to make. Stay tuned as arina guides you through the recipe!

INGREDIENTS

    1 small beetroot, boiled and cut into cubes
    1 small carrot, cut into cubes
    1 small onion, cut into cubes
    1 cup coconut milk
    1 piece ginger
    1 green chilli
    2 tsp cooking oil
    Pepper to taste
    Salt to taste
    1 vegetable stock cube

DIRECTIONS

  • Heat oil in a pan
  • Add the onions, carrots and ginger
  • saute for a while
  • Add the green chilli
  • Allow the ingredients to sweat and soften
  • TIP: You can add a little water to speed up the process
  • Add the beetroot cubes
  • Stir a bit
  • Once the vegetables are cooked, puree them
  • Add the cooked vegetables in a blender an blend them well
  • Transfer the blended vegetables back into the saucepan
  • TIP: Add a little seasoning and the puree works as a great dip by itself
  • Put the flame on
  • Add some coconut milk
  • Stir well
  • TIP: Ideally the soup should be on the thinner side
  • Add the vegetable stock powder
  • Add some salt
  • Add some pepper
  • Let the soup come to a light boil and then cool it
  • Ready to serve
