INGREDIENTS
1 small beetroot, boiled and cut into cubes
1 small carrot, cut into cubes
1 small onion, cut into cubes
1 cup coconut milk
1 piece ginger
1 green chilli
2 tsp cooking oil
Pepper to taste
Salt to taste
1 vegetable stock cube
DIRECTIONS
Heat oil in a pan
Add the onions, carrots and ginger
saute for a while
Add the green chilli
Allow the ingredients to sweat and soften
TIP: You can add a little water to speed up the process
Add the beetroot cubes
Stir a bit
Once the vegetables are cooked, puree them
Add the cooked vegetables in a blender an blend them well
Transfer the blended vegetables back into the saucepan
TIP: Add a little seasoning and the puree works as a great dip by itself
Put the flame on
Add some coconut milk
Stir well
TIP: Ideally the soup should be on the thinner side
Add the vegetable stock powder
Add some salt
Add some pepper
Let the soup come to a light boil and then cool it
