INGREDIENTS

    ½ cup chopped mushrooms
    ½ cup boiled yellow corns
    1 small spring onion, finely chopped
    ½ red bell pepper, finely chopped
    ½ a green capsicum, finely chopped
    Handful of spring onion leaves
    2 tbsp fresh cream
    2 tsp oil
    A pinch of oregano
    A pinch of red chilli flakes
    Salt to taste
    A pinch of pepper
    Tart shells for filling

DIRECTIONS

  • Heat oil in a pan
  • Once the oil is hot, add the spring onions
  • Add the capsicum
  • Add the red bell pepper
  • Sauté the ingredients for a minute
  • Add the mushrooms
  • Add the corns
  • Add salt as per taste
  • Add pepper
  • Add oregano
  • Add some chilli flakes
  • Add the fresh cream
  • Sauté for a while
  • Add the spring onion leaves
  • Fill each tart shell with the sautéed vegetables
  • Garnish the tart shells with some spring onion leaves
