Trying to fit into that amazing lehenga for Diwali this year, But unsure of what to eat? Nandita has just the thing for you. Try this amazingly tasty Mock Cauliflower Rice and get your desired results. Lets get fitter this Diwali!
1. In a heavy bottomed non-stick pan, heat the oil. Add ginger, garlic, green chillies and saute until aromatic. Add the onion and bell pepper and stir on high flame for 2 minutes.
2. Add frozen green peas, grated cauliflower and toss well until combined with all other ingredients. Stir this for 2-3 minutes.
3. Add soy sauce and vinegar, stir well. Sprinkle some water, cover with a lid and cook for 3-4 minutes until cauliflower ‘rice’ is just tender but not mushed. Taste and add a pinch of salt if required.
4. Garnish with fresh coriander. Serve hot.
