Aloo bhindi is a regular fixture in every Indian home. Yet, we never tire of this classic combination, best enjoyed with rotis and rice and dal. Here is Archana Atre's quick and easy recipe for delicious aloo bhindi ki sabzi with a masala stuffing for the bhindi.
1 cup coriander + coconut + green chili paste
Handful coriander leaves, chopped
1 cup bhindi, slit
1 potato, sliced
Salt to taste
1 tbsp mix masala
2 tbsp oil
1 tsp cumin seeds
To make the stuffing, In a bowl add the paste, mix masala, coriander leaves & salt and give it a good mix.
Stuff all the bhindi’s with the stuffing.
Keep some of the stuffing aside and add potatoes to it. Mix the potatoes well with the mixture.
Heat oil in a pan. Add cumin seeds, coriander leaves, the potato & bhindi mixture.
Cook for 7-10 mins.
Enjoy with some rotis.
