Green Pea & Lettuce Soup
A day out in the heat can leave you drained of energy completely. And what can be more refreshing than a cup of fresh soup that you can make in a jiffy? In this video, we share with you the recipe for a quickie-the green pea and lettuce soup!

- Heat a sauce pan
- Add oil
- Add the onions
- Sauté the onions
- Add a little salt to sweat the onions
- Add the green peas
- Add the lettuce leaves (roughly tear them with hands)
- Stir well
- Once the lettuce leaves shrink a little they need to be pureed
- Transfer the mixture into a blender
- Add a few min leaves
- Add a splash of water
- TIP: One can also use other herbs like thyme, spearmint, marjoram instead of the mint
- Transfer the pureed mixture into a saucepan
- Add some more water to adjust the consistency
- Mix well
- TIP: This soup need not be hot. It be served at cold, slightly warm or even at room temperature
- Add some salt and pepper as per taste
- Let the soup warm up and it’s ready to be served
- Serve in an espresso cup or shot glass and drizzle some extra virgin olive oil on top
