A quintessential Sindhi vegetarian curry, this one-pot meal is a delight for everyone who is health conscious.

INGREDIENTS

    1 whole bunch spinach
    ¼ bunch of khatta palak
    5 to 10 stems of dil
    5 to 10 stems of methi leaves
    1 cup of chana dal
    1 small potato
    1 small brinjal
    8-10 cluster beans
    1 medium sized carrot
    2 to 3 inch piece of pumpkin
    1 medium sized onion
    2 small tomatoes
    10 to 12 cloves of garlic
    1½ inch piece of ginger
    2-3 green chillies
    2 tsp coriander powder
    ½ tsp Jeera powder
    ½ tsp turmeric powder
    Salt to taste
    4 tbsp of vegetable oil
    1 cup water

DIRECTIONS

1. In a pressure cooker, add in oil, garlic, ginger, green chillies and saute.

2. Put in onions and saute until translucent.

3. Add in dal, carrots, pumpkin, potatoes, beans, brinjal and mix well.

4. Put turmeric powder, coriander powder, cumin seed powder and stir.

5. In this, mix tomatoes, salt and all the green vegetables.

6. Mix well, pour in some water and let it cook for a while.

7. Once cooked, blend with a hand blender.

8. Garnish and serve.
