Peel the onions, and slice them
Heat oil in a wok or in a deep thick bottomed pan, add the cumin seeds, let them crackle.
Now add the sliced onion, sauté in low flame till golden brown.
Now in a small grinder add cardamom, black peppercorns, garlic cloves, ginger, green chilies, fresh coriander, mint and grind till a smooth paste. Your fresh Madhubani masala paste is ready.
Add this masala paste to the wok. Sauté at low flame for 3-4 minutes.
Now add turmeric powder, red chili powder and coriander powder to the wok, add 2 tbsp. of water also, sauté for 3-4 minutes.
Now add chicken to the wok, season, mix everything together and sauté till chicken starts to get a little bit brown.
Now add around the ½ cup of water and simmer till chicken is cooked. Stir in between.
