Ingredients to make Pudina Chutney:
For 250-300ml of pudina chutney:
• 1/2 cup pudina or mint leaves
• 1/2 cup dhaniya or cilantro leaves
• 2 tbsp sugar
• 1 tsp salt
• 4 green chillies
• Juice of 1 lemon
• 1 1/2 inch ginger
• 3 garlic cloves
• 3/4 cup of desiccated or freshly grated coconut
• Water in accordance to the consistency
• Hand blender or regular mixer grinder
• Blender spoon or regular spoon
Add the coriander or dhaniya leaves
Add the pudina or mint leaves
Now add 4 green chillies, 3 garlic cloves, 1 1/2 inch ginger, juice of 1 lime
2 tbsp of sugar, 3/4 cup desiccated coconut and salt according to taste
To start with add 2 tsp of water
Start pulsing the ingredients
Blend till a fine paste appears
Ready to serve TIP: If the chutney is dry add only 1 tbsp of water at a time to avoid the consistency from turning watery
