This easy yet delicious Veg Cheese Pasta recipe by Chef Varun Inamdar is a cheesy delight in every bite to relish on. It's divine in its simplicity with an Indian touch to it making it even more drool-worthy dish to try at home.

INGREDIENTS

    1 tbsp butter
    1 tbsp olive oil
    1/4 cup red onions, chopped
    1 tbsp garlic, chopped
    2 bay leaves
    2 tbsp maida
    2 cups water
    1/4 cup grated cheese
    1 cup mushrooms diced
    1 cup mixed capsicum
    1/2 cup broccoli
    200 grams raw fusilli pasta
    1 tsp black pepper
    1 tsp red chili flakes
    Handful spinach leaves
    1/2 tsp ajwain powder
    Salt as required

DIRECTIONS

Heat oil and butter together in a pan, add onion, garlic and maida.
Stir fry it well Add chopped capsicum, mushrooms and broccoli.
Mix it well and let it cook for few minutes Now add powdered spices and stir fry it with other ingredients
Next add water to the pasta mixture, salt, grated cheese and pasta.
Stir it together Let it cook for 7 – 8 minutes. Top it with spinach and olive oil and stir-fry it
Your cheesy veg pasta is ready to serve.
