Ganesh Chaturthi Special: Sweet Fried Fritters

Method:

  • Heat 1 small bowl of ghee, 1 small bowl of water, 1 small bowl of sugar and a pinch of salt
  • TIP: Avoid adding milk as this sweet preparation will get spoilt
  • Transfer the liquid mixture into a plate to cool
  • As the liquid mixture cools, heat oil for frying
  • Once the mixture has cooled, add gram flour and knead into a dough
  • TIP: Roll out the dough immediately because the addition of ghee tends to make the dough hard if kept aside for long
  • To roll out the dough:
  • Make flat dough balls and roll them out into chapatis
  • TIP: Do not use any flour while rolling
  • TIP: Do not roll the chapati to thin or too thick
  • Cut the uneven edges of the chapati with a cutter
  • Once the dough is rolled out, use a cutter to cut the shankar para into square shapes
  • TIP: To test if the oil is heated, throw in a piece of dough. If it rises, the oil is ready for use
  • Once the oil is heated, start frying the pieces
  • TIP: Once shankar paras have fried, reduce the flame before removing it to ensure the oil remains heated for the next batch to fry
  • Remove the shankar paras on a tissue to get rid off the excess oil
  • Ready to serve
