Indian Style Spiced Coconut & Chicken Risotto

INGREDIENTS

    Ingredients:-
    Oil:- 1 teaspoon
    Diced Chicken:- Half Cup
    A pinch of salt
    A pinch of black pepper powder
    Diced onions:- 1/2 cup
    Curry powder:- 1 tablespoon
    Paprika powder:- 1 teaspoon
    Turmeric powder:- 1 teaspoon
    Cumin seeds:- 1/2 teaspoon
    Cayenne pepper:- 1 teaspoon
    Arborio rice:- 2 cups
    Diced green bell peppers:- 1/2 cup
    Diced red bell peppers:- 1/2 cup
    Salt to taste
    Black pepper powder:- 1 teaspoon
    Coconut milk:- 1 1/4th cup
    Coconut cream:- 1 tablespoon
    Chicken stock:- 2 - 3 cups

DIRECTIONS

Method

1.In a pan heat 1 oil.

2.Add diced chicken

3.Add salt, black pepper powder and mix it well

4.In the same pan add onions, curry powder, paprika powder, turmeric, cumin seed, cayenne pepper and saute it well.

5.Add arborio rice, diced red and green bell peppers, and mix it well

6.Add salt, black pepper, coconut milk, coconut cream, and mix well

7.Add diced chicken to the mixture, stir ingredients together

8.Add chicken stock and cook for 4-5 minutes

9.Garnish with bell peppers and serve hot.
