Karanji Falvoured Cupcakes

1. Preheat the oven to 170-180 degrees C for 15 minutes

2. Whisk eggs for 3 minutes till they turn frothy and lemon yellow

3. Add half the sugar (1/2 cup) whisk

4. Add the rest of the sugar (1/2 cup), coconut essence and whisk again

5. Once the sugar is mixed well, add 1/2 cup desiccated coconut, nutmeg and cinnamon. Whisk again

6. Sieve in the flour, baking soda in two batches

7. Add milk. Now, cut and fold the batter

8. Add rest of the milk, cut and fold the batter

9. Ladle the batter into a cup cake tin, lined with cupcake paper

10. Put the tin in the pre-heated oven, baking it for 10 minutes
