Karlachi Bhaji

- Heat 2-3 tbsp oil
- Once the oil is hot, add 1/4 tsp asafoetida
- Add 1/2 tsp mustard seeds
- Add 7-8 crushed garlic cloves
- Add 1/4 tsp turmeric powder
- Add finely chopped onions
- Now add salt as per taste
- Add chopped bitter melon
- Mix well
- TIP: Adding the onions and bitter melon together, helps reduce the bitterness
- Now add 1 tsp mix masala
- Add 1 tbsp sugar
- Add water
- Mix well
- Cover the vegetable and allow it to cook under the steam
- Ready to serve
