In the mood for some lip smacking Indian snacks? How about trying your hands at an authentic Gujarati dish? Delicious and easy to make, the khatta dhokla is a not-to-be-missed recipe!
1 cup Dhokla flour consists of 2 cups raw rice + 1 cup split black gram
1 1/2 cups of sour yogurt
1/2 tsp sugar
1/2 tsp of fenugreek seeds
2 tbsp of oil
1 tbsp of ginger chilli paste
1 tsp of lemon juice
Salt to taste
1 tsp of fruit salt
1 tbsp of white butter
Red chilli powder and black pepper for garnish
Add the sour yogurt into the dhokla flour
Add 1/2 tsp each of fenugreek seeds and sugar
Cover the batter with a lid and keep it in a closed cupboard for 6-8 hours for fermentation
Add 1 tbsp of ginger chilli paste
Add 1/2 – 1tsp of salt
Add 1 tbsp of white butter
In 2 tbsp of warm water add 1tsp of lemon juice, 2 tbsp of oil and 1 tsp of fruit salt
Mix and add it to the dhokla mixture
Gently mix the mixture together
Use a stainless steel plate and grease it with little oil
Add 1/2 cup of batter into the plate
TIP: If one wants a thin dhokla reduce the quantity of the bater and for a fatter dhokla, add more batter
Sprinkle some black pepper and red chilli powder to garnish
Steam the dhokla for 5-7 mins
Open the lid and with light fingers touch and check on the dhokla
Sprinkle few drops of water
Use a flat spoon to cut the dhokla into squares or diamonds
