1. Heat the olive oil in a large skillet set over medium heat. Add the garlic and cook 2-3 minutes, or until soft and fragrant.
2. Add the mushrooms and cook 4-5 minutes, or until they begin to soften. Add Kissan Tomato Ketchup. Cook for about 2 minutes. Stir in the parsley and season with salt and pepper. Add grated cheese and mix well.
3. Top 2 slices of bread with one slice each of cheddar. Top with the mushroom mixture and cover with the remaining bread.
4. Cook sandwiches while covered over medium heat for 4 minutes on each side, or until bread is golden brown and cheese is melted.
