Kolkata Style Puchka

    Puchka / पूरी
    2 Cups Wheat Flour / 2 कप गेहूं का आटा
    1 Cup Semolina / 1 कप सूजी
    1/4 Teaspoon Baking Powder / 1/4 चम्मच बेकिंग पाउडर
    Salt to Taste / नमक स्वादअनुसार
    Puchka Filling
    1 Cup Boiled Potatoes / 1 कप उबले आलू
    1/2 Cup Boiled Black Chickpeas / 1/2 कप काले चने
    1 Tablespoon Chilli Powder / 1 चम्मच मिर्च पाउडर
    1 Teaspoon Cumin Powder / 1 चम्मच जीरा पाउडर
    1 Tablespoon Coriander Powder / 1 चम्मच धनिया पाउडर
    1 Teaspoon Chopped Green Chillies / 1 चम्मच कटी हुई हरी मिर्च
    1 Tablespoon Fresh Coriander / 1 चम्मच ताजा धनिया
    Salt to Taste / नमक स्वादअनुसार
    Chutney / चटनी
    1 Cup Mint Leaves / 1 कप पुदीना
    1 Cup Coriander Leaves / 1 कप धनिया पत्ती
    1 Tablespoon Chopped Ginger / 1 चम्मच कटा हुआ अदरक
    1 Cup Sweet Tamarind Chutney / 1 कप मीठी इमली की चटनी
    Water / पानी




1. In a bowl, add wheat flour, semolina, baking powder, and salt to taste. Mix it well with water and knead it into a dough.  Rest the dough for 10 minutes.

2. Take a small part of the dough and roll it with a rolling pin. Cut the rolled out into small circles and take the excess out.

3. Deep fry the cut of circles till they turn golden brown.

Puchka filling:

1. In a bowl, add 1 cup of boiled potatoes, black chickpeas, chilli powder, cumin powder, coriander powder, chopped green chillies, fresh coriander, salt to taste and mix it well. Puchka filling is ready.


1. Blend coriander leaves, mint leaves, chopped ginger, and water together till it becomes a paste.

2. Take the chutney out in a bowl and then add tamarind chutney and water. Mix it well.
