Italian Baked Chicken

Procedure:

  • Place the black and green olives on a tray
  • Add the garlic cloves
  • Add the cherry tomatoes
  • Add the diced mushrooms
  • Add the cubed bacon
  • Add the dried oregano
  • Add 1 tbsp of olive oil
  • With your hands, mix the ingredients well
  • Bake the vegetables in a pre-heated oven at 200 degrees for 20 minutes
  • As the vegetables get baked in the oven, marinate the chicken
  • Drop 1 tbsp of olive oil on a plate
  • Add some crushed pepper
  • Add salt as per taste
  • With your hands, spread the oil evenly on the surface of the plate
  • Marinate the chicken breasts nicely in oil, salt and pepper
  • Allow the chicken to rest for 10-15 minutes
  • Once the vegetables are nicely roasted, season them with salt and pepper
  • Place the chicken breasts on the heap of roasted vegetables carefully
  • Sprinkle some red wine vinegar
  • Sprinkle some olive oil
  • Add a few sprigs of basil
  • Cook the chicken and vegetables in the oven for 15 minutes till the chicken breasts are nicely cooked
  • Garnish with grated parmesan cheese and basil leaves
  • Ready to serve
