    Suran (Elephant Foot Yam)
    Arbi (Colocasia)
    Potatoes (Optional)
    Raw Bananas
    Drumsticks
    Turmeric Powder
    Salt To Taste
    Carrots
    Gawar (Cluster Beans)
    Beans
    Sour Curd
    1 Tsp. Raw Coconut Oil
    Ingredients For Tempering
    ½ Tsp oil
    1 Tsp. Mustard Seeds
    Curry Leaves
    Ingredients For Masala Paste
    ½ Coconut
    1 Tsp. Jeera (cumin)
    3-4 Green Chillies

DIRECTIONS

For Keralites, Onam Sadya is not complete without the preparation of Avial. Made with a variety of vegetables, curd and coconut, this recipe is a good alternative for the vegetarian population out there! Simple, yet delicious to make, this recipe is both high in nutrients and calories.

Method:

1. In a heated pan, add in water along with all the vegetables and turmeric and salt.

2. Let it cook for a while.

3. Add in the coconut paste and mix well.

4. Pour in curd and coconut oil and mix again.

5. To make the tadka, in a pan, add in oil, mustard seeds, curry leaves and mix. Add this to the vegetables.

6. Garnish and serve.
