Masala Dosa Recipe for a Satisfying Breakfast

Looking for a healthy breakfast recipe that's also filling and delicious? Archana Atre is here to help, with her wonderful masala dosa recipe that you can whip up in a jiffy. Potatoes are the star of the masala eaten with soft and crispy dosas.

INGREDIENTS

    For Potato Bhaji:
    2 tbsp oil
    1 tsp mustard seeds
    1 tsp Urad Dal
    1/2 tsp cumin seeds
    3-4 Green chilies, slit
    Handful coriander leaves, chopped
    2 dry red chilies
    1/2 tsp turmeric powder
    ½ tsp asafoetida
    1 onion, sliced
    7-8 curry leaves
    Salt to taste
    2 potatoes, boiled & peeled
    ½ tsp Fenugreek Seeds
    For Dosa:
    2 cups Rice (sona masuri/dosa rice)
    1 cup Urad Dal
    Salt to taste
    Water for Soaking
    Oil for frying

DIRECTIONS

For Potato Bhaji:
Heat some oil in a pan.
Once it is heated, add asafoetida, fenugreek seeds, chana dal, urad dal, green chilies, curry leaves, mustard seeds and give it a good mix.
Then add the onions, salt & turmeric powder and cook till the onions soften and become traslucent.
Then add the boiled, peeled & chopped potatoes to the mixture and give it a good mix, till all the ingredients get well combined.
If required, mash the potaotes with the spatula.
Add some sugar, lime juice and coriander leaves and give it a good mix.
Take it out in a bowl and keep it to cool down.

For Dosa:
To make the dosa soak rice, boiled rice, fenugreek seeds & urad dal overnight.
In the morning strain out the water and add these ingredients into a mixer.
Give it a good mix by adding salt and water as required.
