Indian Fenugreek Vegetable (Methi Bhaji)

Nothing beats a healthy and nutritious homemade Methi Bhaji or fresh Fenugreek Vegetable.

INGREDIENTS

    1 small bundle of methi (fenugreek) chopped
    3 medium sized onions finely chopped
    Oil
    3-4 crushed garlic cloves
    1/2 tsp turmeric powder
    1 tsp sugar
    Coriander for garnish
    2-3 chopped green chillies
    1/4 tsp hing (asafoetida)
    Salt according to taste
    Grated coconut

DIRECTIONS

  1. Heat 2 tbsp oil
  2. Once the oil is hot, add 1/4 tsp asafoetida
  3. Add 3-4 crushed garlic cloves
  4. Add 1/2 tsp turmeric powder
  5. Add 3-4 chopped green chillies
  6. Add 3 medium sized onions finely chopped
  7. Mix and sauté everything together
  8. TIP: To remove the bitterness, pluck the vegetable from the stem, chop it and then wash it in water
  9. TIP: The addition of coconut and sugar helps get rid off the bitterness in the vegetable
  10. Once the onions are sautéed, add chopped fenugreek
  11. Stir well
  12. Now, add 1 tsp sugar
  13. Add salt according to taste
  14. Add 3 tbsp grated coconut
  15. Mix well
  16. Ready to serve
