Blend the varied flavours of different dals in this traditional Milagu Kuzhambu recipe brought to you by Geetha. Toor dal and chana dal come together in this delicious curry rich with spices and fresh vegetables which you're sure to enjoy.

INGREDIENTS

    Toor dal: 1 cup
    Veggies: 1 cup
    (The veggies are banana, white pumpkin, French beans, peas, cauliflower, carrot.)
    Salt to taste
    For the masala
    Channa dal: 1 teaspoon
    Urad dal: 1 teaspoon
    Red chilies: 1 or 2
    Black peppercorns: 1 teaspoon
    Coconut: 2 to 3 tablespoons
    For tempering
    Mustard seeds: 1 teaspoon
    Curry leaves 1sprig
    Red chili: 2no
    Channa Dal: 1 teaspoon
    Urad Dal: 1 teaspoon
    For garnish
    Coriander leaves: 1 tablespoon
    Curry leaves

DIRECTIONS

– Pressure cook the toor dal.
– Cut the vegetables in cubes and pressure cook them separately.
– Heat oil in the pan and add the black pepper. Once they splutter add chana dal and urad dal and roast until it turns golden brown. – Then add red chilies and roast, then add coconut to the mixture.
– Let it cool and grind to a paste.
– Add the cooked vegetables to the cooked toor dal. Add the ground masala, salt and boil for about 5 or 6 mins. Add water to the curry.
– Garnish it with coriander leaves and curry leaves.
– Heat another pan and add oil and all the tempering ingredients.
– Pour it on and the Kootu is now ready. Serve hot with rice.
