Monsoon is incomplete without some garma garam Pakoras, served with a hot cup of tea and freshly made chutney. That’s what makes this Rajasthani Mirchi Vada/Bhajji so hard to resist. Slit the chilies and take out the seeds.
Keep them aside. Take a clean bowl, toss in boiled potatoes with red chili powder, salt, coriander powder, garam masala powder, carom seeds, finely chopped ginger and chaat masala.
Mix them well and stuff the green chilies.
Make a thick paste with Besan and with a pinch of turmeric powder, 1 tsp red chili powder and salt to the taste.
In a kadai heat up oil deep fried the stuffed chilis in batter and deep fry them till golden brown.
Serve them with chutney and kadak chai
