Moroccan Inspired Mint Sauce with Cottage Cheese is a delicious recipe made with mint leaves, paprika, cottage cheese and a lot of vegetables. This delectable recipe is easy-to-make and can be a perfect dinner. Try this Mediterranean recipe by Kamini.

INGREDIENTS

    Sauce:
    1 ½ cups mint leaves
    1 onion
    2-3 cloves garlic
    2 teaspoons water
    Others:
    2 teaspoons oil
    1 teaspoon cumin
    1 teaspoon coriander powder
    2 teaspoons harissa
    1 teaspoon paprika
    ½ teaspoon cinnamon
    1 teaspoon sumac
    1 teaspoon salt
    handful of dried cranberries OR raisins
    vegetables (peas, carrots, beans - boiled)
    100 g paneer or boiled eggs
    almond flakes

DIRECTIONS

Roughly chop the onion, garlic and coriander leaves and place in a mixer with some water and blend into a sauce/puree.
In a medium pan heat the oil with cumin seeds.
Once it sizzles add the remaining masala except for the sumac and cook for a few minutes.
Then add the vegetables, cranberries, salt and sumac.
Pour in the sauce and stir and cook for 5-10 minutes.
Towards the end add the boiled eggs or paneer.
Serve hot with pita bread, rice of couscous. Garnish with some almond flakes.
