Roughly chop the onion, garlic and coriander leaves and place in a mixer with some water and blend into a sauce/puree.
In a medium pan heat the oil with cumin seeds.
Once it sizzles add the remaining masala except for the sumac and cook for a few minutes.
Then add the vegetables, cranberries, salt and sumac.
Pour in the sauce and stir and cook for 5-10 minutes.
Towards the end add the boiled eggs or paneer.
Serve hot with pita bread, rice of couscous. Garnish with some almond flakes.
